When you go to Naples you find these wonderful chip shops where you can eat amazing dishes!
One of those is crocchè, which is quite simple to prepare.
Here are the ingredients:
- 1 kg potatoes
- 150 g ham
- 50 g grated parmesan cheese
- 50 g grated pecorino cheese
- 3 eggs
- 100 gr mozzarella or smoked Provola cut into strips
- Chopped parsley
- Breadcrumbs
- Salt, pepper
- Oil for frying
Boil and mash the potatoes. My suggestion: when you boil potatoes keep their skin because otherwise they’ll keep too much water in them.
When potatoes are cold, add parmesan, pecorino, parsley and 2 eggs.
Take the strip of mozzarella or provola and a bit of ham (you can also roll cheese in ham if you find it easier.
Put ham and cheese in a punch of potato mix, giving it the shape of a cylinder ( ham and mozzarella/provola) will be their filling.
Check that the potato cylinders are properly closed so that the filling doesn’t come out, roll them in breadcrumbs, egg and breadcrumbs again.
Finally fry them for some minutes (until they are golden).
Share them with your guests very warm.

How big should crocche be?
That’s a very good question! They must be quite big! I mean, they are not just a bite! Almost 7/10 cm long and the diameter 3/4 cm!
