Gramigna with sausage is a recipe from Bologna and it’s very tasty!
It’s quite simple to prepare and your dinner will surely be successful!
Here are the ingredients you need for 4 people:
- 400 g gramigna
- 4 sausages (simple sausages, not spiced sausages!)
- 1 small onion
- Half glass of white wine
- 250 g tomato purée
- 2 tablespoons milk
- Parmesan cheese
- Rosemary
- Salt and pepper
First of all, this is the shape of gramigna that is an egg pasta:
Warm a pan and put the chopped sausage (in very small pieces). Then add the chopped onion and let all became golden thanks to the grease of sausages, then add the wine and make it evaporate.
Put rosemary and tomatoes, adjust the sauce with salt and pepper. After that, let it cook for almost 20 minutes. Add 2 tablespoons of milk the last 5 minutes. Milk, even if it’s a very small amount, will give a particular touch to the recipe.
Cook the gramigna al dente in boiling water. When it’s ready drain it and mix it to the sauce with a bit of Parmesan. If you like (as I do) chilli, you can add some. It’s not included in the traditional recipe but it matches anyway 🙂 !

Exactly! It’s an egg pasta typical of the Emilia Romagna area (a reagion of the northern part of Italy). With the sausage sauce it’s really delicious!
