These zucchinis are really really lovely.
Even if they are fried, the marinade will give them a strong and fresh taste! if you have an event at home, they can be a special dish for a buffet!
You can eat them as they are as a side dish, but I really enjoy them in a warm sandwich or a pizza bread with some stracciatella di bufala (it’s a kind of cheese). Check it here: https://en.wikipedia.org/wiki/Stracciatella_di_bufala
Here is the list of ingredients:
- 1 kg zucchini
- Oil for frying
- 3 table spoons of white wine vinegar
- 1 clove garlic
- Some mint leaves
- 3 table spoons of water
- Salt
Slice the zucchinis with a slicer, thin but not too thin.
Fry them in deep oil. When they are ready, take them out and put them on absorbent paper in order to dry them.
In a small pan, bring to the boil some vinegar, garlic and, if you don’t want the taste to be too strong, some water.
Put the zucchinis in a bowl with the mint leaves, put the vinegar sauce on zucchinis, mix them and let them covered for a while, so that they can take all the taste of the dressing.
You can serve them cold or a bit warm.

Can I make it using the oven instead of frying?
well…it’s not the same but you may slice zucchini very thin, put in the oven with some oil (you can brush a few all over) and air cook them.
if you decide to fry zucchini, be careful that oil is at least 180C temperature to avoid them to absorb oil!
